For Easter the “scarcelle” are prepared. It starts a week earlier and lasts until the day of the party. A shortcrust pastry base is made which is woven as if to make a basket and baked in the oven by placing a hard-boiled egg in the center. It is sprinkled with icing and if you also have colored sugared almonds, put them on top. According to tradition, the dessert symbolizes the liberation from original sin: to eat the “scarcedda”, the eggs must in fact be “released” from the pasta!
