Orecchiette

Near Piazza Federico II, near the Swabian Castle, there is the Arco Basso from which you enter a road that was once called the arch of the clogs because there were so many shoemakers shops.
Now this street has become famous for the ladies of old Bari who make cavatelli, trawls and orecchiette. These can be prepared with turnip greens but I like them more with horse braces: delicious!
