In the old town there is a street called Arco Basso also called “via delle orecchiette”. It is an alley where women create wonderful handmade orecchiette using a knife that is dragged onto a piece of mass, cutting them off a long snake coiled with very fast and precise gestures. Hence the ancient name of the orecchiette: “strascinate”.
